Red Potato Garlic Pizza with La Madre

You've never met a pizza quite like this before. With the combination of cheeses, caramelized onion, garlic oil drizzles and La Madre boost, those who happen into your kitchen on pizza night will marvel at the flavor.
Ingredients

1 Red Onion

2 Red Potatoes

10 Cloves of Garlic

½ Cup Shredded Fontina Cheese
-
½ Cup Shredded Mozzarella Cheese
-
½ Cup Crumbled Feta Cheese
-
Dried Oregano
-
Salt and Pepper
-
1 Pizza Crust
-
3 Tsp of La Madre
Directions
For the Potatoes
Preheat oven to 400
Peel and thinly slice the potatoes
Place on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper and bake in the oven for about 20 minutes, until soft.
For the Garlic Oil
In a pot over medium heat, place ½ cup of olive oil and 10 garlic cloves
Cook for about 10 minutes, until the garlic is nice and golden brown.
For the Onions
Thinly slice the onion
In a sautee pan over medium heat, place 2 tbs of olive oil, the onions, and ½ tsp of salt and cook over medium heat for about 20 minutes, until golden brown and caramelized.
Assembly
On your pizza crust, brush a nice layer of garlic oil.
Sprinkle the mozzarella
Lay potatoes on top
Put caramelized onions between the potatoes
Sprinkle fontina and feta cheese
Sprinkle the whole thing with salt, pepper, and a pinch of dried oregano
Finishing Up
Bake in the oven at 450 for about 10 minutes, until the cheese bubbles and the crust is a golden brown.
Remove from oven and brush the edges of the crust with some more garlic oil. Then drizzle with about 3 tsp of La Madre.
Finish up with a squeeze of fresh lime on top of the pizza
Recipe Note
Yes we did make our own crust and yes it’s amazing. Someday we will share. For now, depending on how much of an overachiever you are, you can do the same and make your own or buy a nice one from the store. But we are giving directions with the crust already baked at this point.
