Breakfast Tacos with El Encantador

2 Breakfast Tacos
We call them tacos but they're kinda more like other worldly quesadillas.
Ingredients

4 Corn Tortillas
-
6 Tbs Shredded mozzarella cheese
-
½ Cup Refried Black Beans
-
Butter for the Tortillas
-
2 Eggs
-
Half an Avocado
-
1 Tbs El Encantador
Directions
Butter one side of each of the 4 corn tortillas
Place buttered side of one tortilla in a sautee pan over medium heat and sprinkle 3 Tbs of shredded mozzarella over it, then add another corn tortilla on top, with the buttered side facing up
Cook for about 2 minutes, then flip and repeat on the other side. Remove from pan and place on a plate
Repeat this process with the other 2 tortillas to make another quesadilla/taco
Make 2 eggs any way you like em! Scrabbled, fried, sunny side up, you get the idea
Take your half avocado and make thin slices
Spread about ¼ a cup of refried beans on each quesadilla/taco. Then add your eggs between the two quesadilla-tacos. Then add the avocado
Drizzle about ½ tbs of El Encantador on each pile of deliciousness that you see before you
