We call them tacos but they're kinda more like other worldly quesadillas.

Ingredients

  • 4 Corn Tortillas

  • 6 Tbs Shredded mozzarella cheese

  • ½ Cup Refried Black Beans

  • Butter for the Tortillas

  • 2 Eggs

  • Half an Avocado

  • 1 Tbs El Encantador

Directions

  1. Butter one side of each of the 4 corn tortillas

  2. Place buttered side of one tortilla in a sautee pan over medium heat and sprinkle 3 Tbs of shredded mozzarella over it, then add another corn tortilla on top, with the buttered side facing up

  3. Cook for about 2 minutes, then flip and repeat on the other side. Remove from pan and place on a plate

  4. Repeat this process with the other 2 tortillas to make another quesadilla/taco

  5. Make 2 eggs any way you like em! Scrabbled, fried, sunny side up, you get the idea

  6. Take your half avocado and make thin slices

  7. Spread about ¼ a cup of refried beans on each quesadilla/taco. Then add your eggs between the two quesadilla-tacos. Then add the avocado

  8. Drizzle about ½ tbs of El Encantador on each pile of deliciousness that you see before you
